I have the perfect recipe for you; it is easy, fast, tasty, healthy and most importantly…you’re kids will love it! There are few ingredients and ones’ that you can always have on hand, which makes it an easy thing to whip up when short on time.  Besides eating it right out of the oven, I like to make extra and use it later in the week in a wrap or sandwich or topping on my salads (healthy version for breaded chicken salad).

Parmesan Chicken Bake

4 chicken breasts- cut in half

5.3 oz Greek plain yogurt

1 cup of parmesan cheese

package of Ritz crackers

3-4 tsp garlic salt

1. Put Ritz crackers in a plastic bag and crush with a rolling pin until fine

2. In a bowl, mix together crushed crackers, 1/2 cup parmesan cheese, and garlic salt

3. Rub chicken breasts with yogurt, then coat with cracker mixture and place in pan sprayed with cooking spray.

4. Once all chicken is in the pan, sprinkle with remaining parmesan cheese. Add some more if desired.

5. Bake uncovered at 350 degrees for 30-35 minutes until cooked through.
